What exactly does thermal paste do?

When you apply thermal paste what does the thermal paste do for your computer?

Thermal paste is used on CPU's and heatsinks to provide better heat conduction and help the heatsink keep the CPU cooler.

The Thermal Paste also fill in any voids and air gaps between the CPU and heatsink which helps the heat dissipate much better.
