The white chunks in milk are a result of curdling and is a result of the cream components of the milk not being mixed in through the process of homogenization.

The homogenization process is where the fat globules in the milk are passed though a high pressure machine which breaks them up into smaller droplets.

The floaters in milk are casein molecules which float around and naturally repel each other.

And if the milk becomes more acidic and has a lower pH the casein molecules then attract each other and begin to clump or curdle and they separate from the liquid portion called whey.

Also if the milk is stored too cold or is frozen the fat separates and can cause flaking in the milk.

As long as the milk does not smell bad or taste bad it is safe to drink.

Spoiled milk will taste sour and will smell sour and if it does smell sour or taste sour the milk should be thrown out.

When milk spoils it will also become lumpy, slightly yellow and thick depending on how long the milk has spoiled.

If you drink spoiled milk you will often be just fine other than getting an upset stomach, diarrhea, stomach cramping, vomiting and feel sick.

Most times the sickness from drinking spoiled milk goes away within 1 to 2 days.

In severe cases you could get more severe poisoning but if you only drank a small amount of spoiled milk you will most often be just fine.
