Giblets in a turkey are often used for adding texture, protein and a rich flavor in gravy and stuffing.

You can also roast the giblets in a pan with the turkey or simmer the giblets in water along with some celery and onions to make giblet stock.

Giblets are not poisonous and can be eaten or added to gravy or other dishes.

The giblets are essentially just any of the edible organs of a fowl like turkey as well as chicken, goose and ducks.
