Smoked vegetables are bad for you even though the vegetables themselves are healthy for you.

Smoking vegetables can cause carcinogenic compounds to form in and on the vegetables during the smoking process of the smoked vegetables.

The compounds that can form on smoked vegetables are HCAs and PAHs.

These HCAs and PAHs compounds are linked to an increased risk of developing certain cancers which, when eaten in large quantities over time.

Smoked vegetables also lose some of their nutrients, especially the water soluble vitamins and minerals.

PAHs are polycyclic hydrocarbons and HCAs are heterocyclic amines.

These PAHs and HCAs are known to be carcinogenic and can damage your DNA and potentially can lead to cancer development.

Smoking vegetables can also cause a loss of heat sensitive nutrients such as vitamin C and certain B vitamins, that are water soluble and can leach out during the smoking process.

The smoking of the vegetables also can denature proteins in the vegetables, and alters their structure and can also potentially affect their digestibility and bioavailability.

However when eaten in moderation, the smoked vegetables are okay for you to eat.
