Grilling meat is considered bad for you as grilling meat can create cancer causing chemicals in the meat which include heterocyclic amines and polycyclic aromatic hydrocarbons which have been linked to cancer.
Heterocyclic amines are chemicals that form when the sugars and the proteins in the meat react to high heat and the longer the meat is exposed to the heat the more heterocyclic amines are created.
Polycyclic aromatic hydrocarbons are chemicals that are made when fat drips onto an open flame and then burns and you can also be exposed to polycyclic aromatic hydrocarbons in the smoke from the grill when grilling meat.
To reduce the risk of the cancer causing chemicals when grilling meat marinate the meat in acidic marinade like Indian garlic turmeric or Hawaiian teriyaki and or add some rosemary to the meat before grilling.
Also cleaning the grill, trimming excess fat and precooking the meat can reduce the cancer causing chemicals in grilled meats.
To cook meat to prevent carcinogens prepare the meat ahead of time and marinate the meat for around 30 minutes before cooking.
You can also prevent carcinogens in meat by reducing the cooking time by microwaving the meat before cooking it and avoid direct heat.
Don't let the meat touch an open flame directly or hot metal surface.
If grilling the meat "don't" grill the meat over direct heat.
However if the meat does have to be grilled over a direct flame be sure to turn the meat over frequently to reduce the exposure to carcinogens.
Burnt meats are generally safe to eat although they have the potential to cause cancer just like burnt toast has the potential to cause cancer.
The chance of getting cancer through from burnt meat, burnt toast or other burnt foods is pretty low.
As long as the meat or toast or other food is not burnt too bad it's generally safe to eat.
The reason why burnt toast is bad for you is because the burnt toast contains a chemical called acrylamide which has been linked to cancer.
Burnt toast is considered carcinogenic which means it has the potential to cause cancer.
Not everyone who eats burnt toast will get cancer as a result but eating burnt toast can increase your risk of getting cancer.
So it's not recommended to eat burnt toast.
Acrylamide is a chemical that is also found in starchy foods like bread and potatoes, if they're cooked at high temperatures for a long time.
This also includes baking, barbecue, frying, grilling, toasting, or roasting.
You can also find acrylamide in other foods such as biscuits and coffee.
