Blue cheese is made out of either Raw cow milk, goat milk or sheep milk.

The majority of blue cheese in the USA is made from raw cow milk that is pasteurized and treated using a starter culture which converts the lactose to lactic acid and changes the milk from a liquid into a solid.

Then the mold Penicillium is added which gives the blue cheese it's moldy look and taste.

The blue in blue cheese is caused by the addition of Penicillium mold during the blue cheese making process.

The only difference between blue cheese and bleu cheese is in the name and how it's spelled.

Blue Cheese and Bleu Cheese are the same cheese.

Blue Cheese is called blue cheese because of the blue looking mold in the cheese.

The special mold creates the unique veins of blue or blue-green mold throughout the cheese.

It is these blue veins in the cheese that gave it its name, as well as its signature sharp and salty flavor.
