When deep fried potatoes are done the deep fried potatoes will float and be crispy and golden brown but not burnt.

You should soak the fries or potatoes in water before frying to remove starch and help the fries cook so that they turn out crispy.

To remove starch from the potatoes you soak the potatoes for 30 minutes.
