The proper amount of sugar makes ice cream freeze harder.

Adding too much sugar to the ice cream makes the freezing point of the ice cream lower so it will not freeze very hard.

You want to add just enough sugar as the recipe calls for and the ice cream will freezer harder.

Too little sugar in the ice cream can also cause the ice cream to be too soft.
