Burgers are better on a griddle instead of a grill as the grill allows the fats to drip off and away from the burgers and a griddle allows the fat to stay within the burger.

So the fat being left in the burger when cooked on a griddle means that the burger will taste better and be more juicy.

The best oil for a flat top grill or griddle is canola oil, olive oil or other high smoke point vegetable oils.

You should oil the griddle after every use and clean the griddle and apply a light application of oil to protect the griddle from rusting.

You should re season a griddle every couple of months with regular use.

Also if you're cooking on the griddle for the first time you should also season it before use.

When your griddle keeps rusting it's usually because it has not been seasoned properly.

An outdoor griddle may rust due to being left outside too long.

You can season your griddle using any cooking oil although flax oil or virgin olive oil works the best.
