Ground beef that is cooked can be good after a week in the fridge.

However ground beef that is raw would not be good or safe to eat after a week in the fridge as the raw ground beef would grow bacteria and spoil after a few days in the fridge.

The raw ground beef in the fridge would start to smell after around 3 to 4 days and should be thrown out.

Spoiled ground beef is dangerous to eat because it may contain pathogenic bacteria, which are responsible for foodborne illnesses.

Symptoms include fever, vomiting, stomach cramps, and diarrhea which may be bloody.
 
If the ground beef is slimy, that's not normal and is a sign that the ground beef is spoiled.

Smell and visually examine your ground beef, and if it's brown or an off odor, those are also signs that your ground beef is spoiled.
