You can fry rice in butter but rice does not fry as good in butter as it does in oil.

When frying butter it's best to use oil such as vegetable oils or peanut oil due to the high smoke point.

The best oil to fry rice in is peanut oil or palm oil or other vegetable oils.

The peanut oil and palm oil have a high smoking point which is suitable for stir frying and also adding a neutral taste which will not affect the fried rice flavor.

Although olive oil and butter are not good for cooking fried rice.

The best rice for fried rice is Jasmine Rice or long grain rice.
