The reason you should not salt meat before cooking is the salt draws out moisture from the meat which makes the meat less moist.

The reason people wash their meat with vinegar and lemon is to kill any bacteria on the meat.

Plain water cannot kill off any bacteria on the meat but the vinegar and lemon can kill off the bacteria on the meat.

A good natural meat tenderizer is vinegar and even baking soda or tea.

Lemon Juice also makes a good natural meat tenderizer or even some Coke or Pepsi.

Pepsi and even Coke is a good meat tenderizer and it also adds some sweetness to the meat.

Pepsi and Coke is sometimes used when cooking ham as well.

You can use Pepsi inside of Coke for ham or any other dark soda.

The coke or Pepsi adds a bit of sweetness to the ham.

If you don't like salty ham, you can always soak your ham in water for about 30 minutes, remove and pat dry before cooking.
