The differences between Mustard and Wasabia japonica is the fact that the heat of Mustard is contained in the Mustard seeds, while the heat of the Wasabia japonica plant is contained mainly in the swollen stem (rhizome) of the plant.

There is no wasabi in Chinese mustard.

The spiciness of Chinese Mustard comes from the mustard seeds used in Chinese Mustard.

What makes Chinese mustard so spicy is the mustard seed which is used to make it's highest in myrosinase which is an enzyme that causes heat when cracked and mixed with liquid.

Chinese mustard is used as a condiment to spice up and flavor meats and appetizers.

The Chinese mustard seeds and mustard greens are used in a lot of Chinese dishes to add spice and flavor.

To make Chinese hot mustard, the seeds are first dehydrated and then ground into a buttery, fine, beige powder that's much more tame in appearance than taste.

Mustard does not have to be refrigerated although it is okay to refrigerate the mustard if you desire.

However as long as the expired ketchup smells okay then it's safe to eat although it may not taste as good.

As long as the ketchup is kept sealed when not in use then it can remain safe at room temperature without refrigerated for a long time.
