Wilted Kale does lose some nutrients.

Although wilted kale still contains some nutrients the wilted kale loses some of it's nutrients once it begins to wilt.

Also any fruit or vegetables lose a bit of nutrients the moment they are picked.

Some volatile vitamins in Kale evaporate along with the water, but minerals, carbohydrates and many other nutrients remain.

The flavor of fresh wilted vegetables changes, but wilted produce in otherwise good condition makes good soup, stew or stir-fry.
