You can overcook a hard boiled egg and overcooking a hard boiled egg could make them rubbery and may make you sick as well.

Overcooked hard boiled eggs will also have a green ring around the perimeter of the egg yolk.

Cooking hard boiled eggs takes at most 10 to 12 minutes and cooking the boiled eggs longer than that can make them rubbery.
