A baby can eat pancakes as long as they are eating solid foods and have some teeth where they can chew the pancakes.
If the baby has teeth and is eating solid foods then yes you can feed the baby some pancakes but just cut the pancake up in small enough bite sized pieces so that they don't choke on it.
You can also add some pancake syrup to the pancake as well if the baby prefers to eat it with maple syrup or even some butter.
I used to eat pancakes when I was a baby as I have some pictures of my mom feeding me pancakes when I was a year old and when I was 7 months old as well.
I still love pancakes just like I loved the pancakes as a baby and toddler and kid.
