When driving down the highway your oil pressure should be between 45 to 60 PSI.

Your oil pressure might even reach 70 PSI but any higher than that then something is wrong and your oil seals on your engine could blow out leading to oil loss and loss of engine oil pressure.

My vehicles run between the 45 PSI and 55 PSI level which is normal and anything below that then something is probably wrong.

Although I had a truck that would get as low as 25 PSI oil pressure when the engine was just idling and that was okay but your oil pressure should go up as you accelerate and if the oil pressure goes down as you accelerate then you're losing oil pressure which could either be worn out engine bearings or a bad oil pump, clogged oil filter and even an oil leak.

25 PSI oil pressure is okay but if the oil pressure drops below 20 PSI then you need to check the oil level and have the engine checked out.

Your engine needs the oil and oil pressure to keep the engine lubricated.

If you completely lose oil pressure you'll hear it through tapping noises of the valves and lifters since they won't be lubricated.
