Why do pigs squeal when picked up?

The reason pigs squeal when you pick them up or attempt to pick the pig up is due to it's natural instincts.

The pig squeals because it feels or sees you as a threat when it's being picked up so the pig squeals to try and get away from you and to alert other pigs about you picking them up so they can maybe try to ward off the attack.

But sometimes a pig will eventually get used to being picked up as long as you're picking the pig up to show love to the pig.

But most times pigs are picked up to be slaughtered so the pig gets scared and tries to fight you to get out of your grip and then squeals to alert other pigs to the threat.

It's basically just a natural instinct that the pigs would do in the wild to alert other pigs as well.
