You could totally eliminate carbs from your diet and be able to live but if you completely eliminate carbs from your diet then you will lose energy.
So without the carbs you won't be energized and your body will use your bodies fat and protein for energy.
Carbohydrates are the bodies main source of energy so without the carbs we won't be very energized.
So you may not be able to totally live without eating carbs because you need the carbohydrates from the food for energy.
This is why you lose weight when on a low carbohydrate diet because when you don't have the carbs for energy the body starts burning off body fat to use for energy.
