To make pancakes from scratch you simply need some flour, baking powder, salt, sugar, milk and an egg and some butter.
These ingredients make for a tall, fluffy, golden stack that easily tastes better than any boxed mixed pancakes available.
To make your pancakes from scratch you make the pancake batter by using 1-1/2 cups of all purpose flour, 3-1/2 teaspoons of baking powder, 1 tablespoon of sugar, 1/4 teaspoon of salt, and 1 teaspoon of vanilla extract.
You also need 1-1/4 cups milk, "whole milk is best".
And for richness, you need 1 large egg, plus 3 tablespoons of unsalted butter (melted and cooled slightly).
Using a large mixing bowl, whisk the ingredients together and then use a non stick skillet or griddle and a pour enough pancake mix into the skillet or on the griddle and cook as normal and flip the pancake as needed.
In a large bowl, whisk the flour, baking powder, sugar and salt together and then in a separate medium bowl or a large measuring cup, whisk together the milk, egg, melted butter and vanilla extract.
And then pour the wet mixture into the dry mixture and gently stir with a spatula or fork just until combined.
Having a few small lumps is perfectly fine.
Just don't overmix, or the pancakes will become tough and flat.
Allow the batter to rest for 5 to 10 minutes so that the flour hydrates.
To cook the pancakes, place the skillet or griddle over medium-low heat.
Coat the griddle or skillet with a thin layer of butter or neutral oil.
Then using a 1/4 cup scoop, drop the batter onto the skillet.
And leave a few inches of space between them and if adding mix-ins, like chocolate chips or blueberries, sprinkle them onto the wet batter at this time.
And then cook the pancakes for 2 to 3 minutes.
When the pancakes are ready to flip, there will be bubbles that form on the top and the edges look dry and the underside will be golden brown.
Then flip and cook the pancakes for another 1 to 2 minutes until they are cooked through and serve while hot with some real maple syrup and butter.
