Gastroenteritis on a CT scan will look like diffuse thickening of your bowel wall, with the inner lining "mucosa" appearing more enhanced and the middle layers, "submucosa" appearing edematous, "swollen" and sometimes forming a target like or "halo" sign.

Other findings of gastroenteritis on a CT scan are pericolic fat stranding, "Strands of fat around your colon", fluid in your abdomen called ascites, or even bowel loops that are dilated.

These findings on the CT scan though are often non specific and CT scans are not usually recommended routinely for uncomplicated gastroenteritis but instead for for severe gastroenteritis complications or to rule out any other conditions.
