Some people will need to feel the urge to poop or poop shortly after eating due to their gastrocolic reflex, which is your natural body response to food entering your stomach.
It doesn't mean that the food you just have eaten is passing through your system that quickly.
It takes 1 to 2 days for the food to fully travel through your digestive tract and the gastrocolic reflex simply is what triggers you to have a bowel movement from waste which was already in your colon.
When you eat food and the food enters your stomach, the food stimulates your colon to contract and initiate a bowel movement, which is a reflex that is stronger after meals, especially after breakfast.
Although the gastrocolic reflex doesn't mean that the food you have just consumed is being eliminated immediately as it takes much longer for food you just eaten t be digested and pass through your entire digestive tract and the urge to poop soon after eating is often a result of waste that is already present in your colon that is ready to be eliminated.
