Plumbing, HVAC and even appliances as well as other things in your home can creak or pop and expand and contract with humidity and temperature changes.
Water softeners, radon mitigation etc will also cause noises in the night.
When you hear tapping in your walls at night it could be a result of mice or rats or even just loose pipes in the wall could be contracting and expanding or even the HVAC system could be making the tapping sounds.
In some cases the tapping in your walls at night could be a termite infestation or problems with the home's foundation.
