Why does cold air take your breath away?

Your lungs contain warm air and that warm air in your lungs is what keeps your lungs airways open allowing you to breath properly.

When you inhale cold air instead of warm air then the cold air causes spasms in your lungs closing your airways when you breath in too much cold air.

That's why it's important to wear a scarf over your mouth in extremely cold weather to avoid your lungs closing off and restricting your airways.
