Currently, the ZEISS 20x60S would be the candidate for handheld use. If you want maximum portability, the current choice would be a 10x25, the model being either a Swarovski CL or a ZEISS new Victory Pocket.
For general use, 8x40 roof prism binoculars are ideal, not too heavy and not so powerful that you struggle to hold them steady. There are now many on the market from cheapies (£50 or so) to the likes of Zeiss and Leica which can cost over £1000. The Chinese seem to be making some half decent ones too.
