The reason you fart when you poop is because the muscles in your intestines become stimulated when you poop.
So when you're about to poop the muscles are moving the poop to your rectum and so it triggers the fart when you poop.
Exercise or even coughing can also cause you to fart by stimulating those muscles.
When your poop hits the back of the toilet without sinking it can be a result of excess fat in the poop which can settle in your poop and make it thicker and stickier.
