Cell phone providers do not record your conversations on cell phones because if they did they would be violating your privacy laws.
The only time your calls are recorded is when you contact a company and they state they're recording the call for quality and training purposes.
Cell Phone providers do keep records of text messages and call details though but they usually only keep those details on record for up to 2 years before they're overwritten and no longer available.
