The reason you drink water before an ultrasound is so that you have a full bladder which helps the doctor visualize your bladder with the ultrasound.

Without a full bladder it can be difficult for the doctor to visualize your bladder with the ultrasound when it's not full of fluid.

Also the full bladder will also push your bowel up and out of the way and help the doctor visualize other pelvic structures much more clearly.

Before an ultrasound you'll need to drink as much as 28 to 32 ounces of water 1 hour before the ultrasound and do not pee before the ultrasound.
