I'm not 100% sure but I believe the scammers want you to use Itunes and other gift cards because they're not as traceable as the Western Union or other payment forms and there's less risk of them getting prosecuted for having money sent to them via gift cards.
I think they then resell the I Tunes gift cards and that's how they get there money from the I Tunes gift cards.
