Purple Potatoes are healthier for you than white Potatoes because Purple Potatoes are higher in antioxidants, minerals, nutrients and Vitamins.

Regular Potatoes such as white potatoes are still very healthy for you but eating more purple or blue potatoes can give you more health benefits.

Blue potatoes taste slightly different than regular potatoes.

The taste of a blue potato is a slightly rich and nutty taste and the blue potato also has more starch in them than regular potatoes.

Blue Potatoes are perfect for making mashed potatoes with because they soften much faster than regular potatoes do because of the starch content.

Also the blue potatoes hold together better when making Potato Salad too.
