As long as you freeze the meat if you plan to keep the meat past the use by or sell by date the meat will be still safe and good to eat for 6 months to a year.
The freezer will keep the bacteria from growing on the meat so when meat is frozen it won't go bad although it may get freezer burn but it's still very safe to eat.
Meat will only last around 2 to 3 days in the refrigerator but if you want to keep meat longer then you have to freeze it for long term storage.
I've kept and ate several types of meat in my freezer for a year and sometimes 2 years and although it's not as fresh as before the meat is still perfectly safe to eat.
