Is it okay to eat undercooked salmon?

No there's no health risks in eating undercooked salmon since you can actually eat salmon raw if you want too although I find it tastes much better when the salmon is cooked.

Cooking the salmon makes it taste better and extends the time before it will spoil.

So you can eat raw salmon or undercooked salmon without any health risk and it doesn't matter how fully cooked the salmon is before you eat it.
