If a cow begins chasing you, sometimes you can scare the cow off by making a lot of noise while you're leaving cows area.
If that doesn't work then do your best to just run and get out of the cows way or if you're in a field where the cow is just try and run and get over the fence if there's a fence.
You want to get out of the cows presence.
