When making shrimp ceviche the shrimp does start to turn pink around the edges and then it also turns ghostly translucent, then appear cooked.

The shrimps texture will also change.

Shrimp is sorta raw in Ceviche as it's not cooked the traditional way.

However in reality the shrimp is sorta cooked as it's cooked in the marinade instead so the shrimp Ceviche is not really raw.

When Ceviche is prepared and served it's made using shrimp that is marinated in lemon, lime and orange juices, plus chiles for some heat.

So in a way the shrimp in Ceviche is cooked in the juices but that's the only way it's cooked.

To actually cook the shrimp requires heating it up through use of a stove and since the shrimp in Ceviche is not cooked using a stove or other device the shrimp is actually raw and not cooked.

So yes shrimp in ceviche is cooked to a certain extent but actually is raw so if you're pregnant or breastfeeding you should avoid eating ceviche or anything else that contains raw fish.

The raw shrimp in ceviche or other raw fish can cause health issues with the unborn baby and health issues with the baby when you're breastfeeding.
