The reason people eat cranberry sauce on Christmas is because by the early 20th century, farmers began harvesting cranberries in bogs instead of dry-harvesting, which led to cranberry sauce as a Thanksgiving staple.

It was probably inevitable that the cranberry became associated with Christmas.

With their bright red shiny color, they reflect the season perfectly and consequently as early as the 1840s, people were stringing them with popcorn to make festive garlands for the Christmas tree.

At the first Thanksgiving there was no cranberry sauce as cranberry sauce had not been invented yet.

Although cranberries may have been served at the first Thanksgiving but cranberry sauce was not yet available or being made.

The Pilgrims were likely familiar with cranberries by the first Thanksgiving, although they wouldn't have made sauces and relishes with the tart orbs.

However Canned cranberry sauce got its actual start in 1912 when cranberry growers Marcus L. Urann and Elizabeth Lee started working together to create a jellied sauce, which was concocted by boiling the bruised berries from the bog.

And in the very early 1910s, Marcus Urann, a lawyer who abandoned his first career to buy a cranberry bog and would go on to become one of the founders of what would become Ocean Spray began canning the stuff as a way to sell the seasonal berry year-round.

Go a step further by adding a garnish like sugared rosemary or candied ginger.

Or, cook the canned sauce with orange juice and zest for a citrusy take on a holiday standby.
