To make a Peach Melba you simply poach some fresh peaches in syrup made with a vanilla bean and serve it over some vanilla ice cream and then add a drizzle of raspberry sauce.

To make a Peach Melba start by poaching the peaches b combining 1 1/2 cups of sugar, water, 3 teaspoons of lemon juice and vanilla and then bring it to a boil over medium-high heat and stir until the sugar is dissolved.

Place the peach halves in the boiling syrup carefully and cook until they are tender, which takes around 3 minutes per side, testing by piercing with a paring knife.

When the peach halves are tender, use a slotted spoon and transfer the peaches to a bowl and allow them to sit until they are room temperature, which takes around 5 to 10 minutes.

Then slip the skins from the cooled peaches.

If you're using frozen sliced peaches you can add the thawed peach slices to the boiling syrup and return it to a boil and cook for 2 minutes and then remove from heat and let the peaches cool in the syrup again until room temperature.
