You make pepperoni by grinding pork and beef together using a coarse disk in a meat grinder.
You then mix the ground up pork and beef together with salt, sugar, paprika, cayenne, pepper, red wine, garlic, anise seed, saltpeter and ascorbic acid.
Next take the mixture and spread it out into a large pan, and cover it loosely using wax paper, and then put it into the refrigerator to cure for 24 hours.
